We are evaluating Crystal Corral to use at the college. Since we don't want to give our users the SA password, we have an account called Viewer that has SA permissions with its own password. Every time we try to use the Viewer account, we get an SA Account Locked error and everyone is locked out of our database. Is there a way to use a non-SA account?

It's possible that the Viewer account isn't properly set up in the software's administration area. My advice is to log in with your Administrator account, then access the Users area and manage the account. Select the Viewer account and enable it. You can set up different security permissions as well, including password and login information. After this procedure, restart the whole system for the changes to take effect and attempt to login again. It should work this time.
Crystal Corral is cutting columns from new Crystal report. This is a report with the months of the year and it only shows columns up to month of May. Any suggestions how to prevent this?

There seems to be a problem with your Crystal Coral and the Crystal Reports. One of them isn't configured properly in terms of layout structure. Access the configuration data for both programs and make sure that all the fields and columns are defined properly. According to the official user guide, this is what causing the error for missing columns.
